The Green Smoothie


It may sound like a scary concept.  Perhaps something only a raw-food enthusiast living in southern California would drink after a 6:00 am yoga class.  But green smoothies are actually delicious!  Packed with nutrients and great for a breakfast or filling snack on the go.  After much experimentation (word from the wise – add celery to any combination of fruit and veggies and all you will taste is celery), here is my personal favorite green smoothie recipe:

  • 1 banana
  • 2-3 inches of cucumber, skin on
  • Large handful of spinach
  • Several mint leaves
  • A few shakes of cinnamon
  • ½ cup – 1 cup unsweetened almond milk, depending on desired consistency
  • Fresh squeezed juice from ½ lemon

Combine all ingredients in a blender or food processor and blend until smooth.  I like to make this smoothie ahead of time and then put it in the refrigerator overnight for a quick breakfast.  If you plan to drink the smoothie right away either use a frozen banana or add a few cubes of ice so it’s cold.  Enjoy!
